Craft Beer

The Brewers Association of Boulder, Colorado defines an American craft brewer as small, independent and traditional. Craft beer is a term which generally refers to all-malt beer that is brewed without adjuncts, unlike mass-produced beers which contain large percentages of adjuncts like corn or rice due to their inexpensive, tasteless and odorless characteristics. 'Craft beer' is gradually replacing the term 'microbrew' as the most popular term to describe the output of smaller breweries and brewpubs. Simply stated, craft beer is made using a traditional process of blending the sugars converted and extracted from malted barley with hops, water and yeast. The skill of the Brewmaster brings out the desired aroma, color, bitterness, alcohol content, mouthfeel, foam and flavor qualities of the beers through complex formulations of recipes, selection of quality raw ingredients and careful manipulation of mashing, brewing, fermentation and other processes.



After proper aging at just the right temperatures, the beer is either served directly to the taps out of storage tanks or casks, or it is packaged in kegs, bottles or other containers and delivered to the consumer. Craft beer is usually not pasteurized, but it often goes through a filtration process to improve clarity. However, this is not always the case since many craft beers are not filtered in order to leave the yeast present either in suspension or as a sediment, increasing its appeal to beer enthusiasts that enjoy these characters in certain styles, especially in hefeweizen beers. According to The Brewers Association, craft beer sales were up by 11.7% in 2006, the largest increase in over 10 years.
